RECIPE RADAR | Super Easy No Bake Hi Hat Cupcakes

I've been intrigued by the thought of these Hi Hat Cupcakes for some time...
and also very intimidated. 
Despite my apprehension I was determined to make them...
and I was also determined to make sure they weren't complicated!

A Hi Hat Cupcake is simply a cupcake frosted with a technique that resembles a twisty ice cream cone dipped in chocolate. 

After finding a couple of recipes explaining the technique for making a hi hat cupcake...
here's what I did first...

I ran out and purchased store-bought chocolate cupcakes and quickly eliminated my need for having to bake any. Afterall, the frosting technique is what makes these cupcakes a hi hat and that was my real focus and challenge.

Next, I refrigerated the cupcakes in their original container for about 30 minutes so I could then cleanly pop off the blob of frosting that had already been piped on! Ha! (You can also request unfrosted cupcakes from your local bakery to eliminate having to do this step).

I then grabbed AND DOUBLED my favorite super easy Peanut Butter Frosting recipe (see the bottom of the post) filled a piping bag (or ziploc) and grabbed my oversized 9P frosting tip from The TomKat Studio and began piping it on! (If you don't see it in the shop, shoot them an email).


Perfection!! I knew this frosting would be the perfect (thicker) consistency you need when making a Hi Hat Cupcake. Don't be afraid to practice piping - either on the cupcake or on a piece of wax paper.
You can always scrape the frosting right back into your piping bag when you are done practicing.

Side Note: It's been referenced that any 7 minute or 12 minute icing or thick frosting with a consistency for maintaining its shape will work for making Hi Hat Cupcakes.


When the cupcakes are all frosted - place them on a cookie sheet and pop them into the freezer for about 20-30 minutes.  If you are short on time...you can also choose to store the frosted cupcakes in an airtight container and refrigerate them overnight so they'll be perfectly ready for dipping the next day.

Freezing your frosted cupcakes (or refrigerating overnight) is VITAL to the success of your hi hats. If your frosting is soft or room temperature you are guaranteed disappointment in your outcome.

CHOCOLATE DIPPING
Aside from making sure your frosting consistency is nice and thick in order to achieve good height on your "Hi Hat"  and then chilling your cupcakes - melting the chocolate is the next MOST IMPORTANT step.


The chocolate can't be too hot - the frosting will melt.
The chocolate can't be too cold - it'll be too thick for dipping.


I'm happy to say was able to figure out a way to achieve the PERFECT chocolate temperature and without a candy thermometer or any waiting.  (see the process at the bottom of the post).




Slowly dip your cupcake frosting into the chocolate and if you want the edges to be completely covered  be sure to tilt and roll your cupcake to do so. Touchups can be done with a wooden skewer or toothpick dipped in chocolate.

Allow the extra chocolate to drip off of the cupcake (and encourage this with small shaking movements).



Allow the chocolate to set - put them in the refrigerator to speed up the process - and then wrap your Hi Hat cupcakes with a super cute cupcake wrapper - like these white and black polka dot wraps from The TomKat Studio.

Tie on a cute ribbon as an accent and you are ready to wow your guests or the lucky recipients of these tasty treats! (I add a dab of hot glue under the knot of the ribbon on the front and secure the cupcake wrapper and ribbon with tape on the backside).



Refrigerate until ready to serve.

Now...let me say this!
These cupcakes are impressive to look at and as you might imagine...
they are SUPER SUGARY!!
The abundance of frosting may be a bit too much for your palate and I found them to be little difficult to eat and maintain your dignity at the same time! *wink*

Noooo problem!!
Let's just mini size these!
Besides, anytime I can find an excuse to mini-size something you know I'm going to take the opportunity to do so.

So....this time I used store-bought mini brownie bites (againto avoid having to bake) and followed the same process...

INGREDIENTS NEEDED: 
Peanut Butter Frosting (Double this for 24 cupcakes)
4 oz. cream cheese, softened
4 TBSP butter, softened
1/3 cup creamy peanut butter
1 1/4 cup powdered sugar, sifted
For Hi Hat Cupcakes:
Add more powdered sugar for achieving the perfect consistency for a Hi Hat - amount will be dependent on your altitude, temperature of your kitchen, etc. I ended up using an additional 1 cup of extra powdered sugar when I doubled the recipe.

Combine cream cheese, butter and peanut butter in a bowl. Beat until creamy for about 3 minutes on medium speed. Add powdered sugar. Beat another 2 minutes until light and fluffy. Add more powdered sugar to achieve the desired consistency for piping.

Chocolate for Dipping (Double this for 24 cupcakes)
16oz. bag of chocolate chips (I used Ghirardelli semi sweet)
3 TBSP. Canola Oil

Boil 2-3 cups of water in a pan. I used the bottom part of my double boiler but any pan will do.
While your water is boiling in the bottom pan add HALF of your chocolate  and 3 TBSP. of canola oil to the top pan of your double boiler. (or just find a bowl that will rest on top of the bottom pan - without it touching the boiling water).

Once your water has come to a rolling bubble, turn off heat and remove pan from the heat source.
Place your top pan (or bowl) of chocolate and oil mixture on top of the boiling water pan.
Stir and continue to stir until the chocolate has melted completely.
Add the remaining chocolate and stir until melted.
Adding the other half of the bag of chocolate to the already melted chocolate helps to bring the overall temperature down making it perfect for dipping and eliminating the need to have the chocolate rest for 2 or 3 minutes to cool down. Test it with your finger - make sure it feels like the right temperature to you. It should be warm.

Transfer chocolate to cup that is both tall enough to allow your frosted cupcake to be coated without the tip touching the bottom of the cup as well as wide enough to fit your cupcake into.

KEEP IN MIND
The bigger the cup you use, the more chocolate you will need to be able to fill the cup and keep the chocolate level deep enough for dipping. A teacup worked perfectly for me but I have seen people use a plastic kids cup or Bakerella used a leftover plastic easter cup.

It sounded perfect for Fall and I made it happen this weekend...

I L.O.V.E. Chicken Pot Pie so I was definitely intrigued by this English counterpart.
It was very simple to make and although it doesn't have the "creamy" filling like a traditional pot pie...
it was still delicious and satisfying.

I'm sharing it today for my Recipe Radar post because you'll want to put this on YOUR radar!
The recipe I used needs some tweaking so I hesitated to share it today...

It was REALLY tasty!!

I will be decreasing the amount of broth used because mine turned out really, really soupy. Enough so that it could've been an actual soup with a crust on top.

I loved the thin potatoes and what I found interesting was that you hardly even knew there were apples on top. It took several bites for my family to realize it! They gave it a thumbs up.

I hope you'll try it and if this is something you are familiar with baking and have any tips for me, definitely share them!! I'd love to hear all about them!!

These are all indications Summer is quickly unraveling before my eyes.
These things are also reminders each of my children are growing up...
(without my permission by the way)
and the realization there's nothing I can do about any of it is sinking in...again.

I find myself in this position every year...
suddenly frantic over Summer coming to an end.
I inventory the Summer...
thinking about things I WISH we had done...
and reminding myself of the fun things we were able to do.

And THEN...
most importantly...
figuring out the exact number of days...weekends...
I have left to squeeze in some more memories!!

With all of this on my mind...
I realized the other day I haven't enjoyed one glass of lemonade yet this Summer.
How could I possibly let the Summer go by without sipping on some fresh lemonade?
It's high time I make the time to make a fresh pitcher for myself and my family!

An awful cold kicked my butt last week.
I battled a high fever for days in a row with flu-like symptoms.
I've still got some congestion and a cough I'm dealing with
but at least the fog has lifted.
I'm so grateful.

Something dawned on me today...
this is my very last Summer with Clara before she graduates High School.
I cannot believe I'm even saying that.
When I realized that this morning, I was in tears.
Why didn't this sink in until now?
Am I in denial?
I've got a pit in my stomach over it.

Contemplating scouring thrift stores for some vintage Tupperware molds...
Yeah.
Obsessed.

While I continue my obsession search...

Thinking I'll be creating a Baked Sea Salt & Cracked Pepper Sweet Potato Chip first.
Then...since I know I already love Sweet Potato Fries with Rosemary...
I'll be trying out some Baked Sea Salt and Rosemary chips too.

I can't wait to try these out and report back my findings!

I officially went off of my Whole30 program this weekend!
I didn't make it the entire 90 days as I had originally intended...darn it all
but after being 100% committed over the last 70+ days...
(even while I was on a family vacation - really super hard by the way)...
I absolutely had/have no regrets!
I'll let you know how I "went out" later this week...
and give you an update on the progress I've been able to make!

And guess what?
As of today...I'm already back to following the Whole30 program again!
Yep!
I still have goals that need to be met and I can't quit until I reach them!

RECiPE RADAR | My First Date!

The Recipe Radar post for this week was inspired by my first date...the fruity kind - not a "date-date" 
at a recent visit to a local raw, vegan restaurant located in the quaint, historic town I live near - Mt. Dora.

I had seen the bistro several times in passing and decided it was time to investigate. *wink*
Following a delicious entreé...

Personal-sized Medi-terranean Pizza
Made with an almond flour crust and topped with veggies and kalamata olives

Here's where my obsession with creating a dessert made from Medjool dates began...
and ultimately the inspiration for today's post.

Chocolate Brownie 
(fresh fruit substituted for the á la mode)

When the waitress rattled off the list of dessert selections...
I was ecstatic to find out there was one single item (Whole30-approved)...
that I could actually eat.

I couldn't believe how delicious the brownie was.
I was told it was made from dates, cacao, almond butter and almond flour. 

I left the restaurant a very happy girl.

One week later, +Paula Biggs, a sweet friend from +Frog Prince Paperie posted some bacon-wrapped dates on Instagram/Facebook...
And that was pretty much it for me.
I decided it was high-time I buy me some dates!
I began to research some recipes to try to recreate the delicious brownies from Vitality Bistro.

I'm ready to create something delicious!

Many of you know about the Whole30 challenge I embarked on last month...
as part of the  Self-Intervention I made public here on the blog and began on April 1st.
You may have followed along on my Instagram feed for updates…
or perhaps you kept up with me on Facebook throughout my journey.

You may also know that on April 30th  I completed my Whole30 successfully!!!
not one single cheat,  slip or hiccup along the way - I really am proud of myself for pushing through!

Here's what you may not know…
I still haven't stopped.
I kept my Whole30 journey going - beyond the 30 days!
I'm now on Day 43 and going strong.

It has been challenging to say the least.
I had a handful of moments during the first 30 days that I wanted to quit - but I didn't!
I've even almost convinced myself on several occasions into having ONE cheat day since I finished my first 30 days successfully.
But I can't bring myself to do it.
I've come too far to ruin it.
My goal right now is to go a full 90 days.
I'm taking it 30 days at a time.

I promised to share some results with you when I first shared my Self-Intervention post with you.

Remember me saying...
"IF I feel strongly enough that my results will benefit others...
I will consider sharing pounds lost, inches shed or sizes dropped."

So here are some of my real measurable results during Days 1-30:
- more energy
- sleeping more soundly

and although this isn't the most important one...
it's certainly the most measurable at this point...
my weight.

First let me say...
I weighed myself on Day 0 and did NOT weigh myself again until Day 31.
I honestly did not think I had lost ANY weight.
My clothes weren't fitting any differently (and still aren't)
and even on Day 29 I was still experiencing a good amount of bloating.
I was honestly preparing myself for a huge disappointment on the scale.
Instead...
I about fell off the scale when I realized I had lost 11 lbs!
I could not believe it.
I still can't believe it.

I also have to tell you that I have not exercised at all during my Self-Intervention.
I intentionally wanted to be able to see the impact of just changing my diet.
I was originally thinking I would incorporate exercise at the start of my 2nd 30 day segment...
however, some back pain I've been having over the last 8 months has kept me from doing so.
I'll have my 3rd chiro visit this week and I'm hoping with some additional weight-loss the back pain will subside.

So...
here's where I'm at.

I'm on Day 43.
I will continue to Day 60 eating completely Whole30 compliant.
I will re-weigh on Day 61 and report back.

That's it.
Not looking to turn this into a weight-loss series...
but I certainly 
want to share and inspire anyone else out there looking to make changes.
This is how this is working for me.
It's hard.
It's difficult.
It's challenging.
And it's everything I needed.

KEEPiNG iT REAL
THE DATES
I have to say...
before my visit to Vitality Bistro,  I had never knowingly eaten a date.
I didn't think I was a date-kind-of-girl.
Now that I have a tub of them in my fridge...
I'm finding myself snacking on them like candy. (only about 3-5 daily)
They are NOT pretty.
In fact...they are quite unattractive.
Regardless... I have found myself stuffing them with walnuts
and even kalamata olives for a quick snack. Ha!
I know I'm going to love wrapping them in bacon!
The sweet and salty combination will be heavenly!

THE WHOLE30
Although I had already pre-determined I was going to do a full 90 days...
if the results on the scale wouldn't have been as amazing as they were...
it would've been REALLY hard to press forward through another 30 days...
let alone a total of 90 days.
Just sayin'...
