RECiPE RADAR | Homemade Mayo and Salad Dressings

Monday, April 29

What's on my recipe radar this week?
I'll give you some hints:

1. It's the well known secret for getting kids to eating their veggies.
2. It's something adults like just as much as kids do.
3. It's the universal dip served with vegetable trays at almost every celebration!

If you guessed Ranch Dressing then you guessed right.

The Ranch Dressing recipe I'm looking to make is HOMEMADE!!
I'm not referring to using a dry seasoning packet of Hidden Valley Ranch. (sorry).
The Homemade Ranch Dressing I'm excited to make is truly homemade in every sense of the word...
and it starts with a base of this....

Creamy Homemade Mayo

Before I break down how easy the process is...
First let me say...

The recipe I'm looking to make is Whole30 approved.
That's right.
This dressing is actually a healthier version of your typical Ranch Dressing.
(I'm on Day 29 of my personal Whole30 Challenge - by the way)!! Woo Hoo!!

I introduced you to the Well Fed Cookbook last week. (click here)
Well this is the same cookbook that has inspired me to make Homemade Ranch Dressing.

I made my very first batch of Homemade Mayo for the first time last week.
I knew J was tiring of eating salads with grapeseed oil. (and admittedly,  so was I)
So...I decided to take on the challenge of whipping up some homemade mayo using the recipe in Well Fed.
Because Whole30-approved Homemade Mayo...
is the base I needed to be able to proceed with making whole30-approved dressings.

Trust me...
at first the task seemed daunting.
Who in their right minds would take the time to make homemade mayo?
I had resigned myself to the fact that I would just hold out on enjoying dressings/mayo until my whole30 was over!
And then I  planned on diving right back into the Vegenaise I love.

Let me tell you...
I was amazed at how easy the process was...
thrilled that the mayo recipe called for ONLY THREE INGREDIENTS...
and even more amazed by the scientific method that turns this...

Egg yolk + Lemon Juice + Olive Oil + Blender

into this...
a fresh, beautiful jar of creamy homemade mayo

So once I had my delicious mayo made...
I ventured into trying my first homemade dressing...

Creamy Italian
stores perfectly in the Weck Mini Mold Jar (080)

All I had to do was measure out a 1/4 cup of the homemade mayo and mix in a few spices:
- 1/2 clove of garlic, minced
- 1/8 tsp. Italian Herb seasoning, crushed between your fingers
- 2 TBSP. of vinegar (cider, balsamic or wine)
- salt & pepper for taste

It. is. SO delicious...
So delicious in fact, J wanted to check the ingredients...
just to make sure we weren't breaking any Whole30 rules! Ha!!

So now that I've successfully made two different batches of Homemade Mayo...
along with several jars of the Creamy Italian dressing...
it's time to move on to trying the Ranch Dressing this week!
I just need to switch up a couple of the seasonings and I'll have Homemade Ranch Dressing!

Purchasing the Well Fed Cookbook was worth it just for the Mayo and Creamy Italian Dressing recipes!
LOVE them.
Want to purchase the book too? GO HERE!

Homemade mayonnaise is uncooked so be sure to use the freshest eggs possible to avoid salmonella!
Homemade mayonnaise will last three to four days in the refrigerator.

I can't believe tomorrow marks the very last day of my first official Whole30 Challenge.
It has not been easy by any means!
My hardest day yet was on Saturday.
J surprised me with a trip to Sea World - just he and I.
We were surrounded by amusement park food and he we almost caved for pizza at the end of the day.
But. we. didn't!!!

Jessica - I started the whole30 program on June 1, just to see if I could do this challenge for a month and tonight made my first batch of the homemade mayo. I was SO skeptical and thought for sure it wouldn't turn out but was so thrilled when it turned out perfectly!! I can't stop gushing about it (my husband thinks I am crazy!) Looking forward to some egg salad! :)Thanks for sharing this recipe/link and continued good luck as you get closer to 90 days on the program!
