Looking for a last minute treat for St. Patrick's Day?
I combined my Mini Oreo Recipe...
with a kid-friendly Irish Cream - Cream Cheese Filling Recipe (see the bottom of the post )
and I came up with...

IRISH CREAM - CREAM CHEESE FILLING/FROSTING originally by +Brown Eyed Baker 
adapted by +Pen N' Paperflowers   for a kid-friendly/non-alcoholic version

8 ounces cream cheese, at room temperature
1/4 cup butter, at room temperature
3 or 4 TBSP Baileys Irish Cream Coffee Creamer
3 cups powdered sugar

In a medium bowl, blend together the cream cheese, butter, and Baileys Irish Cream Coffee Creamer until completely smooth. Gradually add the powdered sugar with the mixer on slow to medium speed. (this helps to prevent a "powdered sugar dusting" of yourself and your kitchen). Increase the speed of your mixer to thoroughly combine the ingredients into a nice "frosting" consistency. Fill a piping bag with your filling mixture and pipe onto your St. Patrick's Day Pies.

KEY DIFFERENCES BETWEEN MY KID-FRIENDLY VERSION AND THE ORIGINAL
– I cut the recipe in half.
– I used non-alcoholic Bailey's Irish Cream Coffee Creamer in place of the original Bailey's Irish Cream.
– I did not use it as a frosting but rather as a filling.

Tips:
My kids love to eat these as frozen treats.
I fill a cookie tray up with the finished "pies" and put them in the freezer for 30 minutes.
Once frozen, I place the treats in a Freezer Bag and store in the freezer.
