As you might imagine...
I was definitely feelin' the love yesterday from the surprise I found yesterday from Clara.

So although Valentine's Day is over...
I want to spread a little more love your way and share a quick recap of some things that took place around here.
The ideas I'm about to share can transition nicely into any holiday or celebration.
So you can either tuck these ideas away into your "to-try" file for next Valentine's Day...
or you can plan to incorporate them into something you've got coming up!

Let's begin....

We had basic spaghetti for our Valentine's Day dinner - (along with garlic bread and caesar salad).
Not very exciting.
No big deal.
• the color of the sauce is festive for the occasion...
• I always think of Lady and the Tramp eating their romantic spaghetti dinner together...
• it's something easy which allowed me to focus on my favorite part: DESSERTS!!!

Yes...the desserts.
I didn't really intend on making 3 different desserts...
It just sort of happened.
really.

My original idea was to make some mini cakes for everyone.
Who doesn't LOVE their own personal pint-sized cake?
Something to be enjoyed for a few days vs. one night...
Perfect.

I went with a super-easy strawberry cake with strawberry frosting
using a recipe I've had for years

I also planned on having some ice cream to go along with the cake - just plain vanilla.
Right before dinner was served, I got the notion to make it even more special!

(And SO darling...it was actually Clara's favorite dessert of the night because she said it was so simple and so cute).

And then...
after seeing the "Oreo Truffles" last week that I shared with you on Monday...
well I just HAD to make those too.

I admit it...
probably a bit too much sugar going on for my little family of 5.
I tend to get over-zealous when it comes to desserts.
I just can't help myself.

Think about it though.
For St. Patty's day coming up...
you could try the ice cream idea using a shamrock-shaped cookie cutter.
And those oreo truffles would be perfect using the vanilla creme sandwich cookies, white dipping chocolate, and green sprinkles or drizzles.

I do hope you are inspired to try something new!

In other news...
I'm gearing up for our Central Florida Martha Stewart Dreamers Into Doers meeting on Saturday.
I'm just SO excited to be meeting about 20 other local "Dreamers"!
I've got a few surprises up my sleeve for the group but I dare not reveal them yet. (you never know who's reading).

I'm also VERY excited to be getting closer to revealing the patent-pending party product I'm getting ready to release!
I'm a bit nervous about the response I'll receive...
I of course want everyone as equally excited about it as I've been but there's no guarantees.

And finally...

KEEPING IT REAL
I was fighting back tears as I was finalizing our Valentine's Day dinner.
I was keeping hope alive that Jay would've somehow rationalized surprising me with flowers this year.
(He's no-nonsense, frugal-minded and doesn't see the sense in spending money on something that will be gone in a few days - aside from food). *wink*
My heart raced a bit when I saw a florist delivery vehicle drive by.
But Jay quickly extinguished any further hope with a comment confirming there would be no flowers this year.
With me having tender feelings leftover from the romantic picnic dinner I prepared for us in our living room on Saturday night...
the picnic that turned out to be anything BUT romantic aside from the candles and the fire glowing in the fireplace...
You might say I was quite sensitive.
That's where the tear-fighting came into play during dinner prep on Monday night.
I'm a hopeless romantic...
so I was feeling like the young princess maiden longing for her prince to come sweep her off her feet.

Although I was hiding my tears...
Jay happened into the kitchen and caught me teary-eyed.
I confirmed to him I was upset through a couple of comments about
"wishing he'd put as much effort into the romantic part of our relationship as he does into his work."

And then...
after dinner...
I had to eat my words.
He surprised me with a really beautiful necklace.
I really hate feeling guilty.
And I REALLY felt guilty.
(especially after he mentioned how difficult it was for him to hold off giving it to me...knowing I was upset).

After that I pretty much felt like a "spoiled-rotten" princess maiden that should be left in the tower. *wink*

Don't you love it when I keep things real?! *blushing*

While I'm finishing up going through the photos from the "Bubbles" baby shower that was hosted this past weekend...
I thought I'd share a sweet little something to gear you up for what to expect...

With everything related to the shower theme "She's going to POP"...
"bubbles" and "pop" were prevalent throughout all of the shower details.
These adorable mini cupcakes from Cupcake Delights were one of my favorite elements used on the dessert table.
They were chocolate cupcakes with an ever-so-light hint of cherry soda POP.
And they were topped off with some coordinating candy droplets from Vintage Confections...
created to mimic translucent bubbles...also with soda POP flavors. (vanilla cream, dr. pepper and cream soda).

Didn't they turn out darling?!
Wait'll you see the actual presentation....
it's even cuter!!!

At one point, in my former life, many years ago...
I used to do educational classes for elementary school children. (K thru 3)
What does this have to do with Homemade Oreos?
Be patient and keep reading...*wink*

The concept of the educational classes was basically to bring a 30 minute field trip experience to the classroom.
I had different themes focused on a particular topic and I would come dressed the part to coordinate with the theme.
I would also always leave behind a coordinating treat for the teachers and a simple snack for the kids.
One of the educational programs I offered was called "Penguins and Polar Bears".
I would come dressed as a Penguin...(oh darn...no pictures of that to share with you). *wink*
As you can imagine, the kids LOVED it.
But what the teachers especially loved were the treats I left behind for them.
I had searched for something I could make that was black and white (to go with the theme)...
and I found a simple, yet tasty recipe for some delicious treats I appropriately titled: "Polar Pies".
My two older girls, Clara and Ema, always got to sample the treats...
and we discovered they were quite tasty frozen - which REALLY took the "polar pie" concept to an entirely new level.

It'd been YEARS since I made them.
First of all, I'd forgotten about the recipe until the girls started asking about them one day.
AND...
I couldn't find the recipe. (even after climbing into the attic to search the archives). *wink*
With my girls' ongoing requests...
and the resurgence of whoopie pies running rampant in the dessert/dessert table world...
I figured now was the time to start the search online.
I was thrilled to have found it even though I had no idea as to what they were originally called: Homemade Oreos

I immediately made a first batch last week...


Now...
I have to tell you...
the treats I used to make for the teachers were SERIOUS treats...4" wide seriousness.
The photo above are cookies from the first batch I made last week, which were the size of regular store-bought oreos.
BUT....
taking things to an entirely new level...
And because I love to mini-size everything...
the girls and I created a mini-sized version to enjoy at our slumber party over the weekend:




measuring only 1" wide, these mini treats are ADORABLE!
But what makes these tasty, brownie-like morsels with a cream cheese filling even sweeter...
they are SO simple to make!!


What you'll need:

Cookie Ingredients
1 package of devil's food cake mix
2 eggs
1/2 cup oil see update below 

I've updated the suggested oil amount after having received feedback from a reader (Amanda) about the mix being too oily.

I retested the recipe using the same box mix I've always used and I too had issues with it being too oily.
The only thing I can think of is that either the cake mix formula or the amount of actual cake mix in the box has changed over the years (the first time I made these was 8+ years ago). To accommodate these changes (and perhaps future changes),  I suggest you start with the amount of oil called for on the box of the cake mix you purchase. If you find after mixing the dough that it's not quite pliable enough, add another 1 TBSP. of oil to the mix. The cake mix should roll easily into balls and your hands will have a slight sheen from the oil in the dough. (you should not have oil dripping through your fingertips or pooling at the bottom of your bowl). Yuck! Thanks for your feedback Amanda - and for calling to my attention your personal experience/results.

Cream Cheese Filling Ingredients
1/2 cup butter (softened)
8 oz. cream cheese (softened)
3-4 cups confectioner's sugar (I used 3.5 cups)
1 tsp. vanilla

Alternative Vanilla Cream Filling Ingredients (I've never tried this one but figured I would post it)
1/4 cup room-temp, unsalted butter
1/4 cup vegetable shortening
2-3 cups sifted confectioner's sugar
2 tsp. vanilla extract

Cookie Instructions
Heat oven to 350°.
Add oil and eggs to cake mix and blend together. (See HELPFUL HINTS)
Roll dough into 1/2" balls for mini oreos. (1" for oreo-sized cookies up to 2 1/2" for jumbo size). (See HELPFUL HINTS)
Place on cookie sheet and bake for 8 minutes. (See HELPFUL HINTS)
Remove from oven and let cool for 1 min.
Transfer to a cooling rack to cool completely.

Cream Cheese Filling Instructions
Cream butter.
Add cream cheese and mix well.
Add vanilla, stirring until well blended.
Slowly add confectioner's sugar until desired consistency is reached. (I used 3 1/2 cups)

Alternative Vanilla Cream Filling Instructions
Cream butter and shortening together.
Add vanilla extract and confectioner's sugar slowly - until desired consistency is reached.

Assembling the cookies:
Fill pastry bag or gallon size ziploc bag with filling. (See HELPFUL HINTS)
Sandwich two cookies together by squeezing 1 tsp. (or so) of the filling onto the center of one cookie.
Add the 2nd cookie on top.
Lightly press the two cookies together to help the filling spread evenly to the sides of the cookie without spilling over the edges. (unless you prefer it).

You can either serve them as-is or freeze them for a frozen treat.
You can also make-ahead, freeze and bring to room temperature on the day of your event/party.

HELPFUL HINTS:
Using a mixer, I use my paddle attachment and blend until the dough comes clean from the side of the bowl.
Although it's recommended to use a greased cookie sheet for baking, I skip that part and mine are fine.
If the dough seems too sticky to work with, I have found by letting the dough sit while you make the filling, works like a charm.
Instead of piping the filling, you can also just use a butter knife and spread it on.
If you are going to eat these as a frozen treat, I found that by reducing the baking time by a minute or so will allow for a less crunchy frozen treat experience. Basically, you want a softer cookie before freezing so that you can easily bite into the frozen treat and enjoy a less "crumbly" experience.


So whether you call these "Polar Pies", "Homemade Oreos" or some clever name you come up with on your own...
And whether or not you choose to enjoy these frozen or at room temperature...
With only a few simple ingredients, you are just minutes away from "Mmmm....good"

wouldn't these be PERFECT for your Halloween dessert table?



They'd be perfect for ANY dessert table actually.
And you COULD go crazy and tint the filling to coordinate with your event?!

Other Uses:
Party favors - bag them up either jumbo sized or as minis.

I would've liked to have photographed the first batch and the minis together so you could see the size difference.
However, the first batch was long gone before the minis had been baked.
And I'd like to think the kids could be blamed for most of that...*wink*

Mini cake doughnuts.
I have seen them circling the web and I finally gave in after seeing these adorable creations posted by Heather over at Sprinkle Bakes.

(of course they are frosted in my favorite "vintage blue" too!) *wink*

"Giving in" means I had to order the mini doughnut pan.
I found mine on amazon and it arrived two days later. Nice.

So...
with pan in hand...
and the necessary supplies in the baking pantry...
a FALL version of mini doughnuts awaited their creation.

Using the "chocolate cake doughnut" recipe that was printed right on the pan packaging...
I gathered my ingredients.

After having mixed everything up, I filled the doughnut pan...

Yes...those sprinkles on the pan are a light spritz of olive oil.
For easy filling of the doughnut pan cavities,
I highly recommend filling a gallon-size ziploc bag with the doughnut batter.
By snipping one of the corners with scissors you can easily fill your pan without creating a mess.



8 minutes later, a little bit of cooling time & some confectioner's sugar, I had these...

I dipped the donuts into the glaze and then sprinkled on some decorative sugars


I will be trying Heather's recipe next time - this one wasn't "moist" enough for my taste.
And the glaze recipe I used was runny and was meant more for creating a fully glazed doughnut.
I ended up using Heather's glaze recipe for the Halloween doughnuts.
Otherwise...these are EASY...
super adorable...
and adaptable to ANY party or dessert table.
(perhaps even for Ella's 2nd birthday party coming up - which may be the entire reason I bought the pan)! *wink*

KEEPING IT REAL
First of all...as pretty as the picture is of the ingredients...
it's NOT a true representation of what my kitchen looks like when I bake.
Second...because I wasn't precise on the measurements for Heather's glaze recipe, mine came out too thick.
Which means my dipped doughnuts didn't turn out as pretty as hers. *sniffle*
Third...I DID eat the first row of doughnuts - and maybe a couple more.
Although I can't recall exactly. *wink*

today is THE day.

so.
because i'm just DYIN' to share with you my submissions...
BUT...
i'm keeping them a secret for now...
here's one that i created but did not submit for the contest but is still completely adorable!! (and super easy)

mini ice cream cone cupcake skewer

what you'll need:
mini ice cream cones
cake recipe (a boxed version works too)
cream cheese frosting
red gumball
assorted sprinkles
"spice drop"

place mini cones upright in mini muffin baking pan.
fill mini cones barely 1/2 way with cake batter.
bake your cupcakes right in your ice cream cones for approx. 12 minutes.
remove from pan & let cool completely.
pipe on cream cheese frosting.
add assorted sprinkles & one red gum ball.
cut a sliver from the end of a "spice drop".
slide it onto your skewer as a base to keep the cone in place.
puncture a small hole into bottom of ice cream cone cupcake and rest on spice drop.
ta dah!!!

i hope this mini treat put a smile on your face!
i know i'll have a HUGE smile on mine if i happen to win this contest.

{mini desserts} banana pudding bites

hoping you all had a WONDERFUL fourth of july weekend...



i'm IN LOVE with this mini version of one of the desserts i ended up making!
i call them "banana pudding bites" *wink*
they're TOO cute not to share with you...
don't you agree?

i created them using:
mini plastic shot glasses (found at the grocery store in a pk of 20)
mini nilla wafers
my FAVORITE banana pudding recipe: "Not Yo Mama's Banana Pudding"
festive flags (i made mine using a flat toothpick, a $1 pack of ribbon from Target & adhesive)

then the layering began:
mini nilla wafer
banana pudding (fill a gallon size ziploc and snip the corner for super-easy dispensing)
a slice of banana
repeat...
top off with pudding & another nilla wafer
insert festive flag...
BAM!!
you've arrived at CUTENESS!!

my daughter, clara, helped.
we created an assembly line and 40 of these little treats were assembled in no time.

my favorite part?
the shot glasses were SUCH the perfect size!
they were able to accomodate the mini wafers...
sliced bananas...
AND...
a spoon for easy consumption!
yes people...the dessert can be SUPER cute but if you can't eat it with a spoon?
well...
not. so. cute anymore... *wink*

my mind is spinning with the endless possibilities of mini dessert bites...
these little shot glasses are definitely at the top of my favorite "party item" now!

KEEPING IT REAL:
I made my "festive flags" on the drive to our 4th of July celebration! shhhh!!!
AND...
although i specifically made this mini version of my favorite banana pudding recipe for the sole purpose of being able to use the "mini" version of the pepperidge farm chessman cookies i've been eyeing for awhile...(the recipe calls for the regular sized chessman cookies)
frankly?
the chessmans just DIDN'T look as CUTE as the nilla wafers!
and it's all about presentation...isn't it?! *wink*

and so the journey has begun...
after a visit to the doctor on monday, i've committed to go 30 days gluten-free.
i thought this was a reasonable sacrifice...
considering the $500 lab fee i would incur for food allergy testing.
i shared my commitment with ema over breakfast yesterday morning.
she whole-heartedly volunteered to make the trek with me.
we quickly skimmed the internet & a long list of foods we COULDN'T have...
and that was pretty discouraging for her.
so...
after packing her a gluten-free lunch to take to school...
and thinking about her sweet gesture to tag along with me on this journey...
i spontaneously decided -
at 3 o'clock in the afternoon -
to make these half-dollar sized gluten-free peanut butter cookies.
needless to say, it put a little "spring" back in ema's step when she returned home from school.

i must say...
they are REALLY easy...
and pretty darn tasty.
they aren't absolutely "to-die-for" in my opinion...
but what's not to love about peanut butter and sugar?
(and trust me...there's A LOT of sugar).

a side benefit to having made these?
it meets the requirements for TWO of my goals #11 & #39...


before i sign off -
as of yesterday morning,
we've officially received the "approval" from the bank.
they have indeed accepted our offer on the short sale we've been trying to buy since august/september.
we are beside ourselves.
completely excited.
completely relieved to finally have an answer.
and mostly...
we feel SO fortunate.
it's a GORGEOUS home.
we must close by march 30th.
the inspection is scheduled for today.
wish us luck!

Keeping It Real
I was SO excited to make the peanut butter cookies with Em yesterday.
BUT...
she had invited a friend over and they ended up making the cookies together. (*sniffle*)
I was kind of looking forward to the "together-time".
But you know...it's okay.
They had a lot of fun together - & it'd been awhile since they hung out together.
And i LOVE to hear/watch my kids having fun/interacting with their friends.
Besides, I got to do the 2nd batch all by myself (after they ran off to play and totally forgot to put the first batch in the oven).
And baking by myself is really nice too.
Don't worry. They came back to sample some...*wink*

my first creation from the "petite sweets" cookbook...

mini chocolate velvet cakes...

cute, right?
looks pretty tasty...?
overall, it actually DID taste pretty good. (nothing to write martha stewart about)
but it wasn't that difficult to make. (brownie points)
BUT....
i messed up the icing. *blushing*
go ahead.
look closely.
you can see a curdled, runny mess all up on that poor little innocent velvety cake.
yes.
that's some dripping down the side of the wrapper.
yes.
the ones in the back are even worse looking.

#1: butter was too soft
#2: refrigerated portion was too cold.
mix the two together and you get:
an icing disaster.

i couldn't bare to just toss them all away.
but i also couldn't bare the thought of eating naked cakes.
oh.
no.
these would unfortunately be crowned with a less-than favorable icing presentation.

but wait.
a little bit of valentine's sprinkles...(or maybe it was A LOT) *wink*

i believe the unthinkable has been avoided.
no wasted cakes...
no naked cakes...
an undeniably cute.
seriously cute.
cupcake...
despite the frosting nightmare...
thank you bake it pretty...
i adore you...
