RECIPE | Fish Tacos - easy, delicious and whole30 approved

Thursday, April 16

I've been posting my weekly dinner menus on the Pen + Paper Flowers Instagram feed and I had so many requests asking for my Fish Tacos recipe, I decided to post it here on the blog.

They are quite easy to put together and pack quite a flavor explosion with every bite.
And trust me when I say I love preparing simple meals that can be altered to fit everyone's dietary preferences without having to make completely separate meals. This meal is a perfect example of that. I eat mine in lettuce cups (as pictured) to keep them whole30 approved for myself but Ella and Jay prefer flour tortillas.

There's a delicious citrus dressing used to garnish the tacos and a refreshing easy coleslaw you can use as garnish and a side dish.

This is definitely a family favorite of ours...light, clean, refreshing and satisfying.
I sure hope you'll try it and let me know if it becomes a family favorite for you too.

KEEPING IT REAL
Even though I've upped my exercise routine through this whole COVID-19 #stayhome stuff...and been killin' it I might add...
I've also been baking and eating my feelings too.
BUT...this week I'm getting back on track and keeping my food in check.
Already feeling better. But man...what a roller coaster of emotions.
Sometimes I'm totally fine...rockin' the staying home thing and feeling pretty sane.
The next minute...I just feel sad...and off...with no energy and just want to curl up in a ball and fall asleep. Anyone else?

How to cook Easy Slow Cooker Pot Roast (Whole30 approved)

Instructions
  1. Place carrots and potatoes in 6 qt. slow cooker.
  2. Mix all spices in small bowl.
  3. Sprinkle spice mix on all sides of the pot roast,  being sure to rub in the spices as you go.
  4. Place pot roast on top of carrots and potatoes.
  5. Slowly pour 2 cups water over vegetables and meat...being sure not to completely rinse the spices off of the pot roast.
  6. Cook on low for 6-8 hours.
  7. Shred meat in crock pot or remove meat and slice it for serving. (see notes)

NOTES:

My favorite non-leeching slow cooker for even healthier eating: https://amzn.to/2IoZJUt Pot Roast - use your choice of chuck, top blade, brisket, round, - I've even used pork shoulder. Depending on which meat you choose, you can shred it when it's done cooking or slice it for serving. (as shown in recipe image) Carrots - I use the long carrots as they tend to be sweeter. You can of course use the pre-cut mini carrots for convenience.
