MAKE IT | Fresh Fruit Birthday Cake + mini cakelets

Tuesday, April 14

My middle daughter, Emalyn, turned 16 in March. Yes...sixteen. *sigh*
For the 4th year in a row she made her infamous request for a "fruit cake" as her birthday dessert.

With this being the 4th time I would be creating a fresh fruit masterpiece for her on her birthday my wheels started to spin about

LIFE | Happy Birthday, Birthday Dessert and Surprises

Tuesday, November 5

Before you go jumping to conclusions...this is NOT a Banana Split.
In fact...this dessert is completely sugar-free. I couldn't believe it either!!

I celebrated my birthday this weekend and when Clara mentioned wanting to come up with a creative birthday dessert for me that didn't have any sugar in it...I reminded her that watermelons weren't in season so she couldn't do the Fresh Fruit Cake I normally create for Ema's birthday.

She said she had something different in mind...and I was definitely intrigued.
Nothing could prepare me for what her and Ema created on Sunday.

This birthday dessert is made of nothing but fruit.
The "faux scoops of ice cream" are really peeled apples, cored, cut in half, and meticulously covered with homemade sugar-free whipped cream. (the girls even took the precaution of sprinkling the apples with lime juice - we were out of lemon - to prevent the apples from browning)!

The apple ice cream scoops are sitting on top of a banana cut in 1/2, surrounded by fresh fruit, drizzled with a raspberry puree and sprinkled with crushed nuts. I even LOVE that the girls got out my piping tips to squirt on the decorative whipped cream to put the candles in. The details blew me away!!

I'm all about presentation and I'd say they hit a home run with this one!
I love that they used one of my favorite Gail Pittman serving dishes that I've had forever!!
Creative...am I right?
I'm sooo impressed (and proud) of their efforts. I LOVED it!!

Now...before I was presented with this amazing dessert on Sunday, my birthday weekend began with a last minute dinner with J on Friday night...a surprise spa day on Saturday...a birthday breakfast J and Ella made for me on Sunday morning, a birthday dinner I didn't have to cook and then this fabulous birthday dessert on Sunday evening with my family!
It was a weekend filled with family and beautiful weather and I really couldn't have asked for more.

Feeling so grateful...I've been inspired to get you involved in my birthday celebration...
by doing something special for YOU!

As an ambassador for Compendium Inc. I was sent a copy of one of their beautiful, new, inspirational books...

Fight On...

"Just because your miracle doesn't look like the miracle you were expecting,
that doesn't mean it isn't the one you've been waiting for."

"You were made for something special. Be Patient. The world is rearranging itself."

"At every moment, the world is whispering opportunities. Listen closely."

As with all Compendium books...this new "Fight On" book is empowering!! The motivational quotes that fill the pages have a way of making you stop and listen. There are some quotes that jump off of the page at me...and others that draw me in closer. I'm in love. And more importantly...I'm inspired. I love that! I want YOU to be inspired too!!

I actually have 3 copies of this book.
I'm wrapping up one of the copies to send to my aunt - an incredibly strong woman who's been faced with a handful of intense back-to-back trials over the past 4 months.

The other copy I'm considering keeping for myself, although I have two other people in my life I feel could use this book.

And then I've got one other copy I'd like to send to one of YOU!!
In addition to the book...I'll be including a set of these adorable Pop-Open Window Cards too!
They remind me of the little pop-open lunch notes I used to pack in my girls' lunches...
but these are an "adult" version.

30 little cards in each box...
each box with a different focus/theme...
each card with a different message...
and each box...a little treasure box filled with gold nuggets of inspiration!
I think the pretty packaging and cute design make it a fun, quick way to be inspired.
On top of that...these make such a sweet, simple gift!!

I actually gave Clara the "Be Happy" box and Ema the "Dream" box.
The morning after I gave Clara her box she was heading out the door to school and mentioned to me she'd opened her very first card that morning and it was exactly the inspiration she needed for the day! LOVE hearing that!!

So anyway...back to my gift to YOU!!
It's easy to enter to win. Just use the Rafflecopter app below!!

I'll pick a winner on Saturday, November 9th.
That's it!!

I hope you'll check out all of the amazing products on the Live Inspired website!
They have so many beautiful gifts for every person in your life - including CHILDREN!!
I love that I can't keep up with the new things they are always adding to their site and there's nothing I don't love.

You can check out the Live Inspired Blog too for more inspiration.
Or just go straight to the Live Inspired Website!

As a long-time lover of Compendium Inc. products...I continually feel blessed and grateful to be a Live Inspired Ambassador and it's with sincere thanks and appreciation to the Live Inspired team for making these giveaways possible...and for constantly reminding me to live inspired! *wink*

Remember the Family Reunion I went to over the Summer?
My aunt and uncle from Boone, North Carolina are the ones who hosted it.
The same aunt I mentioned I'll be sending the book to.
She's had an incredibly challenging time over the last 4 months...and so has my uncle.
My uncle ended up having emergency back surgery right after the reunion and she's been helping him recover from that.
Soon after, she lost her very best friend.
She then had to put two of her beloved dogs down unexpectedly.
And then...just a few weeks ago...my uncle had a stroke.
My heart aches for her...for them. This book will be a simple way to reach out and do "something" even though we are miles apart!! (Love you Joyce and Michael)!!

BEHiND the SCENES | Amazing Cake + Crafting + Surprises

Tuesday, December 4

Hello friends.
I was without internet all weekend due to some construction in our neighborhood *frown*
So I was busy all day yesterday trying to catch up on orders, etc.

Still playing catch-up today...
and wanted to share with you a few things that have been going on behind the scenes...

GERMAN CHOCOLATE CAKE

It was J's birthday weekend...
so along with a wonderful dinner with friends Friday night...
I also made him his requested "Birthday Dinner" on Sunday with family - Lasagna
and his requested "Birthday Dessert"...German Chocolate Cake.

I'm not a huge fan of German Chocolate cake...
However, it's not MY birthday, so it doesn't really matter.
With this being one of J's favorite cakes...
I knew it had to impress.
I did a quick search online for "The Best German Chocolate Cake"...
and stumbled upon David Lebovitz's recipe spotted on Annie's Eats.
Wow.
It is amazing.
I cannot begin to tell you how fabulously delicious this cake turned out to be.
In. LOVE with the chocolate ganache-like frosting. That was my favorite part. YUM!!

Because the cake wasn't ready until after dinner Sunday night...
I didn't photograph the cake in it's entirety.
I don't like taking photos at night...indoors...using harsh light.

After everyone devoured it...
I barely had a nice wedge to photograph the next day.

Caution: Baking this cake is not for the faint-of-heart. Be sure to read the "minor issues" portion of
Annie's post to avoid some pitfalls - especially in regards to the frosting. I decided to make the frosting first
so it could be chilling the entire time I was making/cooling the cake. It was perfect by the time I was ready to frost.
However, it warms quickly so I was racing against the clock to get it completely frosted before it started drooping.
Keep refrigerated.

SURPRISE BIRTHDAY GIFT FOR J
Oversized print I had made of his favorite Grandmother, standing with J's grandfather.
This is gigantic and has great impact! I LOVE it! We'll be framing it out and adding more of these!!

MASON JAR LID RINGS
You won't believe what I've been doing with these!!

WOODEN BLOCKS AND WOOD PIECES
A couple of fun crafting projects I've been working and re-working...

ANTIQUE SILVER COASTERS
Part of another fun project I'll be revealing soon...

I hope I've caught your interest!

There's even MORE fun to share with you:

just so I can get great photos...

FAMiLY | Ella's 4th Birthday

Monday, November 19

It was Ella's 4th birthday on Wednesday. (November 14th!!) *sigh*
Because of scheduling conflicts...
we just kept things SUPER simple. *gasp*
Trust me.
I fretted over not having a party for her.
The theme was picked.
The invitations were done.
The planning had been underway for several months.
I was fighting a losing battle though.
Life is much busier when you have two teens and a toddler.
(That could totally be the name of a t.v show) *wink*

BUT...
We still made her feel special...
surprised her with balloons and breakfast in bed...

If you follow me on Instagram, you saw this photo last week...

She got to choose her birthday dinner: Spaghetti
and birthday dessert: Strawberry Cupcakes
And we had dinner, cake and presents with Grandma & Grandpa A.

Here's a 1 minute video I made using Ptch to capture the evening...
http://ptch.com/ptch/50a673608d4f9835a9859021
I would embed the video but Ptch doesn't have that option yet. *frown*

By the way...
Don't judge...
Ella's hair was looking a bit crazy...
And I'm no professional Ptch videographer.
But it's definitely "keeping it real" for you.

KEEPiNG iT REAL
Honestly, as I type the words...
I still can't believe I didn't have the party I'd been planning.
I may need therapy to help deal with this loss...
It truly feels like a loss...
a missed opportunity. *heavy sigh*

Family | Clara's 16th Birthday

Wednesday, May 30

What do you do for a birthday cake...
when the birthday person doesn't like traditional cake?

You can do like I've done in the past...
and choose something like...
cheesecake
ice cream cake

But I needed something EXTRA special this year.
My oldest daughter was celebrating her SiXTEENTH birthday!!

I needed something to keep my mind off of feeling REALLY old AMAZiNG...
and boy did I find it...

Chocolate Chip Cookie IceBox Cake
cake7784wmSM

I normally ask my kids what cake they want me to make for them...
but having spotted this cake on Pinterest about a month ago...
I never even posed the question to Clara...
I kept it a surprise...
knowing it would be the perfect "cake" to make for her!

cake7800wmSM

Clara...
the one who isn't a fan of traditional cake...
and the one who absolutely LOVES chocolate chip cookies...
Well...
This really couldn't have been more perfect.

cake7779wmSM

My thirteen year old, Ema (short for Emalyn)...
the one that asked for a fruit salad for her birthday dessert this year...
and ended up with a "fruit cake" - in the literal sense (see it here)...
Well...
She helped me bake all of the cookies...
We assembled the cake together...
and then the following day, she helped me "whip" up the cream...
and create the chocolate curls which topped off the "cake"...

cake7786wmSM

It's a GREAT recipe! (thanks Martha).
And despite my doubts about the cookies softening up for easy slicing...
it turned out to be a "piece of cake"...*wink*

Clara LOVED it...
(and the #16 sparklers that took the place of candles)

Happy Sweet Sixteen Clara...xoxo

Chocolate Chip Cookie Recipe - Pen N' Paperflowers (I increased baking time to 16 minutes for a "crisp" cookie)
• Photography: Pen N' Paperflowers
• Sparkler Numbers: Publix

KEEPiNG iT REAL
Don't look too hard at the mascarpone filling between the cookies...
it got whipped a bit longer than it should have.
Not pretty when that happens. *frown*

The cake is seriously RiCH.
I really thought we'd all make pigs of ourselves...
and that the cake would be more than 1/2 gone by the time we got done with it.
Honestly...there wasn't one person who could finish the first piece...
(perhaps because the slices were SO tall)...
let alone go back for seconds.

TIPS:
The recipe calls for 96 cookies...
We only made 60 something.
So instead of creating each layer using 9 cookies + 2 in the middle, like the recipe suggested,
we just cut it back to 7 cookies +1 in the middle and made the cake 8 layers high instead of 7.

Wondering if buying packaged cookies would work for all of you out there
who don't have time to bake the cookies? If you try it...let me know!

family | Happy 13th Birthday Ema

Tuesday, March 20

My middle daughter, Emalyn Anne...
turned 13 this past Friday.
thirTEEN...*sigh*

Where did the time go...seriously?
I remember like it was yesterday...

My ongoing efforts to convince this serious tomboy what a beautiful GIRL she was/is...
beautiful girl (final)wm

and how her silliness and laughter would warm my heart and light up any room...
laughter in your smile

She's still serious...a very deep thinker...
and she's still got the silliness and the most beautiful smile in the world.

So what did my cheesecake loving daughter request for her birthday dessert this year?
Fruit. Salad.
*sigh*

Don't get me wrong...
I'm thrilled she actually asked for something healthy.
The creative side of me was frozen though...
No baking?
What was I to do?

I enlisted the help of my awesome Facebook Fans...
and after some wonderful feedback...
I decided on creating this...

A "Fruit Cake"...
fruitcake6611wm

COLLAGE1

fruitcake6610wm

fruitcake6615wm

Using a watermelon as the "base" of the cake...
I then used pineapple, blackberries, raspberries, blueberries, apples, strawberries and kiwi for the cake decor...

She had no idea what I had created...
So right before we brought it out with the candles lit...
I said, "I know you asked for fruit salad but I just HAD to make you a cake"...
(She of course rolled her eyes and was a bit disappointed at my announcement)
AND THEN...
She was pleasantly surprised to see I really did listen to her request...
And she thought it was SO awesome...
she's thinking of asking for one EVERY year! *wink*

Happy 13th Birthday my sweet, sweet Em!

KEEPiNG iT REAL
The toughest part about making the "fruit" cake was cutting the rind off of the watermelon...
and carving it into a round "cake"
But once that was done...
It all came together rather quickly.
And it was surprisingly satisfying...
I quite enjoyed it!!

Oh...
just in case you didn't know...
the two images at the beginning of the post...
those are scrapbooking layouts I did years ago -
back when I was all-things-scrapbooking.
(That's for an entirely different post). *wink*
Ema continues to beg me to start back up...
She loves looking through the albums.
That's one of the reasons I decided to include the layouts in today's post...

Family | Happy 3rd Birthday Ella

Tuesday, November 15

It was Ella's birthday yesterday...
my baby turned three. *sigh*

Aside from a homemade chocolate chip cake (her request)
breakfast in bed...
picking up some birthday balloons...
eating her favorite dinner (spaghetti)...
a birthday photoshoot...
and celebrating with grandma and grandpa...

We kept things pretty simple. *wink*

KEEPiNG iT REAL
I have no idea where the chocolate chip cake request came from?
Sunday night she'd decided on strawberry cake...(even though I was trying to push carrot cake) *wink*
and then...
Monday morning she decided to change up the cake??
I scrambled for a good recipe - ended up just using my fave white cake...adding chocolate chips...
and then adding chocolate chips to my fave cream cheese frosting recipe.
YUM!!
Best part is...
she helped me bake it.
(That is, until she got in trouble for continuing to eat the chocolate chips). *wink*

A HUGE thank you to Grandma A for making homemade spaghetti sauce!!
It. was. YUM!!

Oh...and she was pretty excited about getting her very 1st bike...
along with a Hello Kitty helmet and sunglasses!
Thanks Dad!!

I adore all of the fabric bunting used throughout the party details and the dessert table was truly a whimsical work of art! Keep reading for all of the fantastic details. It's a party in a "class of its own"...
Complete with a mint julep station for the adults, this party manages to combine a casual/girly feel
with a splash of vintage whimsy for the enjoyment of both kids and adults.

Party Girl: Leslie

Color Palette: Soft pink and silver/gray

And we're off....
Now sit back for a "bit" and enjoy taking it all in...

And could the little "filly"/birthday girl be any more cute!!??
There are so many things to love about this party.
Leslie did a wonderful job with all of the super cute diy elements and party details.
It's a unique, adorable theme!!
I LOVE the turnout Leslie!!
Thanks for sharing with all of us!!!

My Favorite Details
• DIY cupcake stands complete with glass cover
• Derby Pie Favors
• The use of burlap-type material used for runners and diy ribbons

Here's the full scoop in Leslie's own words...

The Kentucky Derby is quoted as being the most exciting two minutes in sports. We knew 2 years ago when our sweet Kate was born that the Kentucky Derby would be landing on her birthday several times since it is always the first Saturday in May. So, for her 2nd birthday, nothing seemed more fitting than a good old Kentucky Derby celebration!

Party Inspiration
I researched a TON online, but didn't find a ton of inspiration specifically for Derby parties. I incorporated ideas found on Pinterest too. I knew I wanted soft pinks and grays for the palette and really ran with that. I used a lot of items I already owned and borrowed a lot from my mom. Our silver julep glasses were gifted to me and my husband as a wedding gift, we used my mom's antique beverage cart, our old Shabby Chic quilt from our spare bed, Kate's clothing dresser and borrowed glass jars from a friend's wedding help set the scene.

DIY details
Trying to be as DIY as I could I crafted the cupcake stands from an upside down vase, candle stick holder and candle plate from the Dollar Tree. The milk jars are repurposed from Starbucks jars

Sweets, Treats & Eats
Inspiration from Jess at Pen n' Paperflowers on her marvelous homemade lollipops
My mom helped make the most DELICIOUS mini hot browns I've ever had. (The recipe for the hot browns can be found here.) Another Kentucky favorite! We also had cut fruit served in waffle cones, beer cheese, country ham and biscuits and even mint julep cupcakes.

Beverages
A mint julep station was set up for those brave enough to try them! For those who weren't we had other beverages, including Kentucky's favorite soft drink, Ale 8.

Party Favors
Individual Derby pies were given to all of the guests as thank yous.

Extra Party Details
For a $1 everybody picked a horse name from a hat and the winner took all! The weather was a little cool and cloudy but the sun came out just in time to sing happy birthday and to shine on my old Kentucky home.
